They can be snacks, main meals or even a little mixed drink or two. And, they will all be something simple that you little furnished property tenants can make all by yourself.

Scones, Jam & Cream

Today’s recipe is for Lemonade Cream Scones. They make a great afternoon snack for you and your friends, or they go nicely with a beautiful cup of breakfast tea in the morning!

Ingredients:
3 cups self-raising flour
pinch of salt
300ml cream
1 cup (250ml) lemonade
milk for glaze

Sift dry ingredients in a medium size bowl. Make a well in the centre of dry ingredients. Add cream and lemonade. Mix gently with a knife to form the dough. Knead lightly.

Press dough out to 4cm thickness. Using a scone cutter, cut out scones. Glaze scones with a little milk. Place on lightly greased scone tray and bake at 200C for 10-12 minutes or until golden.

Serve with jam and whipped cream. Makes approximately 12.
